In Waipar=
a,
just North of Christchurch, the “capital” of the South
Island, this family-owned and run winery is the passion of bra=
in
surgeon Ivan Donaldson and his wife, with three of his sons actively involv=
ed
in the business. The family adore wine from all parts of the world which ma=
kes
for a distinctly individual winemaking approach: Kiwi standards are definit=
ely
not their benchmark. When I think Pegasus I think intensity of flavour, individuality of style, and above all wonder=
ful
wines to pair with food.

Sauvignon Semillon 06 and 07
PB take a very different line =
with
their Sauvignon, adding savoury herby notes fro=
m the
Semillon as well as a lovely rounded texture. Time in old barrels adds furt=
her
texture and depth. This one doesn’t jump out of the bottle at you in =
the
way of some Kiwi sauvignons so much as lead you down the garden path, to sit
outside and while away the afternoon.
I love to pair this with our Cellar Door Quiche Lorraine.

Over the years talented winemakers Matt and Lynette Donaldson have learned =

apply a judicious approach with their use of oak, adding body and complexity

eir Waipara vineyard produces – apricot, peach, fig and lem=
on.

in our lives…it’s fashionable to sneer at wines that are not bo=

dry but this is such a mistake – especially for Riesling which is a g=
rape
variety that has the natural
acidity to complement residual sugar. Pegasus Bay Riesling is in my view the
best medium Riesling that NZ produces. Give this a try either as an aperiti=
f,
or with cheese.

monster if not treated with great love and respect. But All Saints winemaker Dan Crane knows how to t=

it. Extended maceration literally gives the wine “breathing spaceR=

– ensuring that those chewy tannins are softened and seduced into
submission. This is an amazing rich full-bodied wine. Lovers of Australian
Shiraz who have not had the opportunity to try Durif=
span>

Bilancia – Italian for
“Balance and Harmony”. This gem of a small vineyard in the
Hawke’s Bay is owned by Trinity Hill’s chief winemaker Warren
Gibson and his wife Lorraine Leheny. In this wi=
ne,
the balance is of flavour – pears and lychees with spice – which together produce a l=
ovely
harmonious wine. One of my favourite aromatics,=
this
wine is more refreshing than a Chardonnay but without the more searing acid=
ity
of a Sauvignon Blanc or Riesling. Just a small amount of this (excellent) 06
vintage left. A perfect way to start a relaxed evening. <=

chell McNicol Shiraz
I regard Mitchell’s
“ordinary” Peppertree shiraz a=
s a
perfect example of an Australian cool-climate shiraz, with great fruit and spice.
It’s not in the least OTT and does not fall into the “lay down =
and
avoid” category of some of the warmer region high alcohol massive
fruit-bombs. McNic is the big brother, using se=
lected
parcels of the very best fruit, and it is a darker, richer and more full-bo=
died
wine than the Peppertree. Andrew Mitchell takes the stress out of this thou=
gh
by holding back the wine before release. With ten years in the bottle this =
now
makes absolutely perfect drinking.
I’m thinking Christmas, but before then anytime you can lay yo=
ur
hands on some (NZ?) venison, pheasant, or game, or a nice slow-cooked leg of
lamb, this will work perfectly.
